I am able to play iTunes files off my computer, but are you able to connect an iPod directly to the EVA8000 so you can play music off the iPod?

Well, I haven't tried this myself... but I do know that the iPod is "locked" in a sense - the EVA8000 will not be able to "see" the files on the iPod by just connecting it to your network, as it won't be recognized as a sharable drive.
If you enable hard disk use for your iPod in iTunes, and put MP3's in that section, the EVA8000 may be able to pick those up somehow, but would defeat the purpose you're after.
I'm sure that it's possible to do the way you're thinking, but it's beyond my knowledge how it could be done easily. If anyone knows, chime in :)
